Operations Director and Manager of the Parlor at Heights House Hotel Will Bryant, is rooted in the history of the City of Oaks. A Raleigh native, born and raised in the restaurant industry through family, Will has over a decade of experience in hospitality. The last four years of his career have been spent in Charlotte perfecting his craft at the esteemed Fin&Fino working under Brittany Kellum. It was here where Will truly came into his own as a mixologist and cocktail connoisseur. With his return to The Triangle, Will is not only finding his way back to Raleigh’s lively and historic community but he’s bringing his skillset full circle with a celebration of his Italian and Southern heritage through the beverage program at the Parlor. Yet the cocktails aren’t the only thing keeping you coming back, as finding Will across the bar from you is equivalent to meeting up with an old friend. His loving and devoted nature to ensure exceptional experience, stories of his adventures with his sweet lab, Peyton, and his expertise in making bold and flavorful cocktails make for the ultimate unwind.
