Marie-Aude Rose
Executive Chef at La Mercerie
Raised in a bon vivant home, Marie-Aude Rose discovered her path early, cooking often with her grandparents in Paris and in the French countryside. After an experimental time studying at the Sorbonne and working as a theater actress, she came to the realization that she loved being in kitchens best, and has been there since. Marie-Aude holds two diplomas from l’Ecole Ferrandi, and has worked in many Michelin-starred restaurants. She first met her husband Daniel Rose at his restaurant Spring, and they have been cooking together since. In 2016, the couple moved to America, where Daniel opened Le Coucou. With La Mercerie, Marie-Aude partners with Robin Standefer and Stephen Alesch of Roman and Williams to bring her talents to New York, helming the kitchen with a thoughtful, imaginative nod to the French ingredients and dishes that shaped her upbringing.
