Sadie Noh
Sadie is the owner and baker behind Littl Madeleine, a small-batch bakery and organic coffee shop in Ballantyne, Charlotte. She studied Economics in college and began her career at a bank, but her heart was always set on opening her own café. She spent years preparing by studying coffee, learning to bake, visiting cafés across cities, and imagining the space she dreamed of creating.
In 2009, she opened Dancing Goats, a cozy café in a suburb of Seoul, South Korea. It quickly became a local favorite, known for its warm atmosphere, handmade desserts, and thoughtfully crafted drinks. Her journey from dreaming to opening and running the café became the foundation for a collection of essays she later published. The book became a bestseller in South Korea’s café and culinary category, inspiring many, especially young mothers with babies, who dreamed of taking a new path in life.
In 2011, Sadie moved to the US with her husband and two daughters. She began hosting cooking classes at home and later opened Slidell Kitchen, a coffee and bakery concept housed in a renovated barn on their small farmhouse in Maryland.
After relocating to Charlotte, she returned to baking from her home kitchen. In 2019, she started Millbridge Cake, creating less-sweet, fresh cakes and desserts like the ones she made for her family. With the support of a growing local community, Millbridge Cake evolved into Littl Madeleine.
Littl Madeleine now offers madeleines, gluten-free Basque cheesecakes, cookies, scones, sandwiches, and a variety of Korean and European-inspired treats and drinks. Everything is made from the highest quality ingredients, including organic flour, organic eggs, organic sugar, natural butter, organic milk, organic honey, and pure heavy whipping cream.
What began as a quiet dream became a journey across countries, kitchens, and communities, now baked into every madeleine.
