Perry Saito
I am a fourth generation chef/restaurant industry professional, following in my family's footsteps. I trained under my father in his sushi bar from a young age, and worked my way up through various kitchens learning as many different types of cuisine and cooking formats as possible.
Eventually opening my food truck Katsu Kart in 2021, which led into opening Dozo Japanese-American Kitchen in 2024 offering fun takes on Japanese classics while exploring the underrepresented menu items from Japanese cuisine.
